Lasagna soup for the student’s soul


A regular Lasagna can be a little bit tough to swallow when you’re under the weather. If you have a cold we whole-heartedly suggest giving this soup a try. Tweet us your pics @TheBrockPress

Lasagna Soup
Prep Time: 15 minutes | Cook Time : 20 minutes | Serves : 2

1 lb ground spicy Italian sausage

1/2 cup diced yellow onion

1 container (32 oz) chicken broth (4 cups)

2 cans diced tomatoes with Italian herbs and seasoning, undrained

¼ tsp pepper

6 oz lasagna noodles, broken into 1- to 2-inch pieces

½ cup grated Parmesan cheese

1 ½ cups ricotta cheese


1. Cook Italian sausage and onion over medium heat for 8 to 10 minutes, stirring occasionally, until sausage is brown and onion is tender

2. Drain. Stir in chicken broth, diced tomatoes, pepper and lasagna noodles.

3. Heat to boiling; reduce heat. Cover and simmer about 10 minutes, stirring occasionally, until pasta is tender. Serve soup with Parmesan and ricotta cheese.
